EGG CURRY

EGGS in red curry ! A quick recipe with great flavor.
This recipe was shared by my bengali friend Shompa, a creative cook, who lives in the Bay area, California.

Boil 8 eggs and 3-4 small potatoes.
Peel and stry fry them for 2 mins,with a dash of salt,chilly powder and chaat masala.

WHAT GOES IN..

half cup tomato canned puree
2-3 fresh tomatoes pureed
a dash of cinammon powder
half tsp sugar
half lime juice
half tsp cumin seeds
two chillies cut into strips ( I use serrano chillies)
2 tsp coriander powder,2 tsp cumin powder, half tsp chilly powder
( mixed in a bowl)
4-5 Table spoon of yogurt
Boil eggs & potatoes
2tsp olive oil, 2 tsp garlic & ginger paste

LET'S COOK..

In a deep bottomed pan, heat oil and add cumin seeds . Add ginger garlic paste and the spices mixed in the bowl . when it splutters, add the tomato puree, sugar, salt to taste, cinammon powder. Let it simmer , saute it till oil separates.
Add  whipped Yogurt and cook on slow till the oil separates.
Saute the boiled eggs & potatoes with chaat masala & red chilly powder ( just to coat it enough )
Add the sauteed eggs and potatoes.
and let the curry coat it.
when its all done garnish it will cilantro leaves and green chillies.

Enjoy it with chapatis/ tortillas or pea pullao.
